Super easy and super cozy crockpot potato soup recipe! This is the best potato soup when it's cold outside – it's so thick, creamy, and hearty. It tastes like a loaded baked potato in soup form!

It gets cold where we live so I am all about the easy slow cooker soup recipes. My whole family loves this potato soup because it instantly warms you up! It's creamy and so good.

If you don't have a slow cooker, you need to try my stovetop cheesy potato soup or Instant Pot potato soup. They're great, too!

  • I use pre-diced packaged hashbrown potatoes for this recipe. It makes it so easy – no peeling or dicing. You can find them in the refrigerated section at the grocery store.
  • The base of the soup is super creamy with cream of chicken soup. It gives the soup the best texture and flavor.
  • Cream cheese thickens the soup and makes it even creamier! You don't need a fancy roux to get the amazing texture.
  • Of course, there's bacon! It's in the soup and then I love to add it as a garnish, too.

I really should call it baked potato soup because that's basically what it is. With the toppings like bacon, green onions, and cheddar cheese it's practically the same thing except as a creamy, delicious potato soup recipe.

Crock Pot Potato Soup Ingredients
  • Cubed hash brown potatoes – or you can peel and dice the same amount of Yukon Gold potatoes or Russet potatoes.
  • Low-sodium chicken broth – or you can use vegetable broth.
  • Crumbled cooked bacon – I love to cook air fryer bacon!
  • Cream of chicken soup – no sub for this, it gives the soup the best texture!
  • Chopped yellow onion
  • Black pepper
  • Garlic powder – or mince one fresh garlic clove.
  • Softened cream cheese – cut it into small cubes.
  • Toppings – shredded cheddar cheese, crumbled bacon, and sliced green onions

Products Needed

Combine the potatoes, chicken broth, bacon, soup, onion, pepper, and garlic powder in the crock pot.

Cover and cook it on low for four to five hours or until potatoes are cooked through.

Add the diced cream cheese and cook it for 15 to 20 minutes or until the cream cheese is melted and combined.

Stir it well before serving. Top each bowl of potato soup with shredded cheddar cheese, crispy bacon, sliced green onions.

Here are other ways to garnish your delicious potato soup!

  • Instead of bacon try cooked cubed ham or cooked diced pancetta.
  • Swap the cheddar cheese for pepper jack cheese, Gruyere, or Colby Jack. Or do a mix of a few!
  • Instead of sliced green onions, try sliced chives or chopped parsley. Or, sprinkle some finely chopped red onion over the top.
  • Try adding small scoop of sour cream on top for a creamy, tangy finish!
